How do I set measure an inconsistently placed plane?
For example, I have a small plane that is all the way on the other side of a large, bendy, warpy casting. Manually measuring, it can be proud or too far in by at least 5mm. This is sooooo far off, that Calypso thinks it has collided on the way.
How can I set up the strategy so that it can be done without manual probing?

I almost never scan casted surfaces. Single points is the way to go. In your circle path, check-mark the Single Points button. I would also suggest adding a large retract.

Most casting drawings have Datum Targets for where you should measure. Does your drawing have this?

If the plane has walls you could measure the a X and Y and even a Z value with a larger search distance. After this create another plane and use those XYZ locations as a formula inside your new plane feature?

Increase the search distances before and after nominal position to a greater value than expected deviation. You also need to make sure your clearance distance and retract distance are great enough to allow clearance.
