Hello. I made a custom L-Star Stylii here by drilling a hole in a 5mm Diameter Extension and the gluing a 1mm stylii in the hole. The OAL Width of the Probe is 10mm.

Is there a way to recreate this in S.S.C.? All the Star Stylii options are way bigger than what I have Custom made here.

Use the Generic components. You'll be able to size these and rotate about axis.

Yes, use generic elements. If you need to have a connection point on the side of a generic extension at a specific height, you can use 3 cylinders: Make the first one as long as the connection height, the second one has a length of zero (it just delivers the connectors) and the third one covers the rest.
